We’ve come to view Risotto as the world’s best flavor delivery device: small amounts of vegetables, shellfish, meat or just fresh herbs are reduced to their essence.
But like so many dishes, risotto requires doing a few things just right; approach and technique matter.
In this 1-hour kitchen demo, we’ll show you the fundamentals of great risotto through two recipes: they start exactly the same way, but end up in very different places.
